I was recently invited to a dinner to welcome Vital Farms to Southern California, held at Jimmy’s Famous American Tavern. In addition to learning tidbits about the Austin-based egg-producers, we enjoyed a fantastic dinner with dishes especially created by the chef to feature Vital Farms’ eggs!

What a lovely dish, yes? Definitely a lovely way to show off the yellow yolks, plus the jalapeño on top was simply devilish! Also, almost dish was served with an accompanying cocktail or wine. Check out the Southern Fizz in the picture below. Yum!

This was probably the most talked about dish after the entire dinner was complete. The eggs were buttery soft and paired with the most delicious brioche toast. The truffles were subtle and a nice earthy component to the dish. Really, I would eat this over and over and over again, if I could…
Do you know how difficult it is to poach an egg? I do! That’s why when I see it on a menu at a fine restaurant like this one, I cannot wait to try it. Wanna see why? Take a gander…
All of the delicious yolky goodness, paired with the frisee and duck confit was amazing! A special mention must be made for the salad itself because sometimes I find frisee too bitter. These were perfection, and I would gladly order this again!

It’s Thanksgiving in one plate! Can I have this at my dinner, pretty please? It was simply delectable and I think they should have this year round, for sure!

My favorite eggs are sunnyside up, so it was fun to have it paired with a dish I have never eaten before, chopped steak! At first, I thought I wouldn’t have the space to finish my entree, but it was gone before I knew it!
I love cupcakes! Even though this looked like a heap of frosting, it was light and perfectly sweet. I almost wanted to take another home… you know, for someone else. But really, it would’ve just been a midnight snack. 🙂
The evening was fantastic, and I adored every dish featuring the Vital Farms eggs. Remember to take advantage of the coupon and cook up one of your favorite egg dishes as well! Their core mission is to “bring ethically and sustainably produced food to the table by coordinating a collection of family farms to operate with a well defined set of organic agricultural practices that includes the humane treatment of farm animals as a central tenet.” Sounds like it makes for happier farmers, happier chickens, better eggs, and more satisfied egg buyers!
Also, a special mention has to be made to the chef and kitchen staff at Jimmy’s Famous American Tavern, who put together this special dinner. I definitely need to come back and try out their regular menu, which will also be utilizing Vital Farms eggs!
